Chicken, Papaya & Lime Salad Rice Paper Rolls

Vegetarian option:
Substitute chicken for 170g firm tofu.


100grams of skinless organic, free range chicken breast, thinly sliced

1/2 cup of ripe papaya, thinly sliced

1/2 cup of capsicum, thinly sliced

1 cup of cos lettuce or leafy greens, thinly sliced

1/2 cup of mung bean sprouts

Juice of 1/2 a lime

1 tablespoon of olive oil

4 large rice paper rolls


  • Steam chicken for approx. 5 minutes until cooked. Remove from heat and allow to cool
  • Combine grated capsicum, leafy greens, papaya and mung bean sprouts in bowl and drizzle with lime juice and olive oil
  • Wet a tea towel and place on bench. Soften rice paper by soaking in warm water for approx. 10 seconds then lay out on tea towel
  • Add a selection of chicken and salad mix; fold each end of rice paper and roll. Refer to rice paper packet for further instructions
